Gelato is and always will be unlike what you will find at Graeter’s ice cream because it isn’t ice cream! Gelato has a custard-style base and uses milk, cream, and sugar but never egg yolks. It is known for its density as it is churned slowly so that less air remains in the mixture and can be stored at a much higher temperature – producing bold flavors and a more well-rounded experience.
Italian ice is made with flavoring and ice, so it is certainly nothing like Gelato. Frozen yogurt has a yogurt base versus custard, which Gelato often uses and cannot pack the same flavors as Gelato.
